One of several fields of sunflowers being grown near I 35 in central Texas.

Notes:

Oil can be extracted from the seeds for cooking and as a biodiesel. Whole seed is used in a number offashions from snacks to baking. Archaeological evidence suggests Native Americans domesticated common sunflower, and for 3000 years the plants were continually cultivated and improved. It was valued as a source of medicines, fiber, cordage, dye, body paint, as well as a nutritious food.
