Sciurus carolinensis
This squirrel was actually eating a pinecone. I heard the droppings as I walked nearby. He was meticulously pulling the pine cone apart and eating the parts he liked and dropping the remnants to the ground 20ft below. It reminded me of a human eating corn on the cob.

Sorry it's taken me forever to get back to you! They are eating the pine seeds inside the pine cone. They peel the outer part of the cone off to get at the nuts. :)
Do you know, are they actually eating Pine Nuts? or some other part of the pine cone?
Sometimes there will be big piles of pinecone pieces underneath a favorite squirrel perch! :)
