Rumex crispus

Description:

Wavy-edged lance shaped leaves. Taproot. 1-4ft stem with branching inflorescences usually.

Habitat:

It was growing in the sun in long grass.

Notes:

Introduced from Europe. Tender, young leaves can furnish a nutritious green, but use cautiously. Dock contains oxalic acid, which gives it its sour taste, and chrysophanic acid, both of which can be an irritant to sensitive persons. Normal servings of the milder greens are probably no more harmful than spinach, but avoid the very bitter plants. Rumex crispus is a milder dock.
