Sunny meadow along the Lewisville Lake shoreline.

Notes:

From fall to early spring young leaves with spines removed and roots make good salad greens and cooked vegetable. The thick young flower stalk is also a tasty vegetable. From 'Edible and Useful Plants of Texas and the Southwest. '
