Many European names have been misapplied to North American material over the years, its probably impossible to reliably identify red Russula species without detailed macroscopic & microscopic info, specialized literature, and preferably expert advice. There are a lot of them...

R. emetica & R. rosea are European species, this is probably something else.

In the PNW we three red russulas that I am fimiliar with. The emetic (Russula emetica) which is poisonous, rosy russula (R. rosea) which tastes REALLY peppery and because of this nearly not palatable. It could be shrimp russula but these tend to have a much darker cap. My best guess is the rosy russula.
