Here in Costa Rica we use Achiote for cooking from meats to rice, it gives food a great color and the flavor is very good. Thanks for sharing JuanContardo.

Great plant! when the seed pods are still green, but mature, pop them open and squish the red seeds inside to produce an amazing red dye/paint. This stuff will stain! It is also a very important source for annatto which is used to naturally color things like cheese and butter.
