Don't look down your nose too much at the lowly, oft-maligned dandelion. It's an amazing plant! ALL parts are edible... roots can be roasted and ground up, then brewed like a coffee. leaves are delicious as a salad or in a soup (young ones are best, as older leaves may be a bit bitter), and the yellow blooms are yummy dipped in a batter and fried. Ive even heard of dandelion wine.... never tried it before, but I'd sure love to! :)

I've read somewhere that early French colonists to the US actually brought dandelion seeds with them, as dandelions are a farm crop in France!
