Chicory

Description:

A Chicory is a blue flower that has a stiff stem and is 30-120 cm tall. It flowers from June-October and lives in fields, roadsides, and waste places. Only a few flower heads open at a time and each lasts a day. The roots can be roasted or ground for coffee substitute or additive. I found mine by a forest. It is in the sunflower family.
