Yes they change color to white, depending on their surroundings although it takes time to either lose the yellow pigmentation or build it up. They do maintain their characteristic red and green stripes, (not seen in this picture).

I was about 10 feet away, but in an open doorway that I could duck into if needed. As I said he was not aggressive or agitated, we were very aware of each other. Thanks for the comment.
