Like the cultivated carrot, the wild carrot root is edible while young, but quickly becomes too woody to consume.
Thank you very much ceherzog! It was quite windy today so the photos aren't as sharp as they could have been... I had to post them though because I've never seen the pink colour on the young blossoms. I thought it was really beautiful.
