This mushroom has nerve regenerating properties and is also delicious!
a.k.a. "lion's mane, bear's head, hedgehog mushroom, etc.. This is the first time I have found this species and was very excited to finally find it! We sauteed it in olive oil and it was crispy deliciousness!!!!
