I don't think that's lamb's ear, I think it's a Verbascum species, most likely Verbascum thapsus. Later in the season, it will grow really tall and sprout yellow flowers. "Lamb's ear" (Stachys byzantina) has purple flowers, but both are golden when you need natural toilet paper :)
