Both those look familiar, and I saw other mushrooms with that part missing, but no large specimens with it? The stem might have been thin on this individual, I dont recall what the others look like. Too bad it wasnt the month I found all these or i'd just go to the woods when they were growing and take more photos, guess it will have to wait until next Summer here!
Hopefully my eyes aren't decieving me tonight, but in that wedge I see tubes, not exactly gills as in Russula. It might just be a young bolete, maybe even B. edulis (only thing throwing me off is the fairly thin stem; true non-mature species appear stout and bulbous).

Looks like some sort of russula type mushroom.
