Sweet Woodruff, known as Waldmeister in Germany. “May Wine” in German is “Mai Bowle” and is made with sweet woodruff, or “waldmeister”. Woodruff loves it here in the Blue Ridge Mountains of Virginia, which is similar to the Rhine Valley and Taunus Mountains near Wiesbaden... May Wine is traditionally made by drying sprigs of waldmeister for several days or a week and then putting the herb in a bottle of reisling wine for a day or two, or even for a week, maybe with some sugar. When time to serve it, the Germans mix it with some champagne. I find the champagne and sugar unnecessary and the May Wine delicious!
