Cynara cardunculus

Description:

Large spiny leaves up to three feet long on plant to six feet. Central stalk produces purple, thistlelike flowers.

Notes:

Both cardoon and closely related globe artichoke were grown as vegetables by the Greeks and Romans. The blanched leafstalks and roots of cardoon are eaten like celery and endive.
