Cichorium intybus
Common chicory, Cichorium intybus, is a somewhat woody, perennial herbaceous plant usually with bright blue flowers, rarely white or pink. Various varieties are cultivated for salad leaves, chicons (blanched buds), or for roots (var. sativum), which are baked, ground, and used as a coffee substitute and additive. Hi birdlady6000. In fact I'm reading Sibley's Guide to Birds. I had seen several new birds in Banff, and my husband took the picture while we were waiting for our dinner to arrive.

We collect it (not the flowers), we boil it and serve it as salad, with some salt, olive oil and lemon juice...Very delicious...
