Virginia Springbeauty

Claytonia virginica

Description:

Small, delicate plant. Thin stems and long, narrow leaves. Flowers are white with pink streaks and pink stamens. Low growing. Native.

Habitat:

Suburban woodlands with a nearby stream.

Notes:

Whole plant is edible. Roots are apparently better when cooked. Because of their small size, they are not really usable as a staple food.
