99% sure its a whitefish, but I could be wrong. There's not much left of the carcass for me to determine anything conclusive, sorry. Nice find though!

Yes that is an eastern box turtle. The EBT is a species known for exhibiting a range of region specific color morphologies. It is also common for a turtle's shell to be stained a certain color depending on its habitat (e.x. Area rich in Georgia Clay deposits = reddish brown shell)

no problem! Check out the Audubon Field Guide for freshwater fish, its one of the best field guides for fish and its really easy to learn from (i.e. lots of pictures)

Thats a largemouth. Smallmouths are brown and their jaw does not extend past their eye

That's a flathead catfish. Look at the caudal fin- its not forked at all, an indicative sign of a flathead
