Ostrich Fern (Fiddlehead)

Matteuccia struthiopteris

Ostrich Ferns. When fully open they are very large and beautiful ferns. Blade coarse ad broadest above the middle and fertile frond is smaller than sterile frond and very stiff and woody.

The locals call these Fiddlehead Fern and they are delicious when picked when they are this size. Wash off the delicate gold filament first and fry or boil.
