Water mimosa

Neptunia oleracea

Aquatic sensitive plant with spongy stems that help it float. When touched the leaves fold up. It is thought to be native to Mexico down to northern South America, and is cultivated as a vegetable in southeast Asia (leaves and shoots have cabbage-like flavor).

Growing in a water lily pond at the Penn State Arboretum.
